Federation of Uganda Employers (FUE) is a voluntary membership organization established and fully owned by the Employers. It was founded in 1958 as the representative body of all Employers in Uganda. It was registered as an Association in 1960 under the Trustee Incorporation Act. It’s a voice of all Employers on Social and Economic issues. It is an organization that advocates for Employers’ rights. They would like to recruit for one of their clients in the fast foods industry.
Job Summary: The Head Chef will be managing production operations in line with the established standard operating procedures while ensuring quality, creativity, cost control and a memorable guest experience.
Key Duties and Responsibilities:
Provide effective leadership to the production staff:
• Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food
• The jobholder will determine production schedules and staff requirements necessary to ensure timely delivery of services
• Demonstrate new cooking techniques and equipment to staff
• Ensure staff professionalism
• Enhance a skills and talent growth environment
Ensure continuous menu re-engineering so as to enhance the guest′s dining experience and increase sales turn over:
• Conduct product development (menu items)
• Study customer tastes and preferences
• Maintain production efficiency
Apply cost and quality control measures to meet departmental budgets:
• Ensure food portion control
• Practice requisition control (check the quantity and quality of received products)
• Monitor material usage
Maintain a conducive / friendly working environment for the kitchen staff so as to provide service to guest and staff satisfaction:
• Ensure work safety and hygiene maintenance for staff and kitchen environment
• Conduct regular training in occupational safety
• Improving employee relations at all levels
Ensure proper usage of utilities and proper waste management:
• Control unnecessary lighting and switching off idle equipment
• Control running water at all the sinks
• Ensuring proper disposal of waste
• Educate staff on recyclable items
Qualifications, Skills and Experience:
• The applicant should preferably hold a Degree/Diploma in Food Production, Culinary Arts, Food Management
• Possess related certification/ training in leadership skills (preferred)
• At least five years of restaurant experience with three years as an Executive Chef
• Awareness of HACCP standards
• Evidence of leading a kitchen brigade of 30+
• Computer literacy skills
• Good leadership and supervisory skills
• Detail oriented and organized in work
• Ability to meet assigned deadlines
• Excellent problem analysis and problem-solving skills
• Excellent interpersonal skills with a customer service focus
• Ability to act and operate independently with minimal daily direction from immediate Manager
• Good oral and written communication skills
