JOB DETAILS:
Job Purpose
An experienced and qualified Head Chef to organize the kitchen’s activities and report to Food and Beverage Manager.

Reports To:
Food and Beverage Manager

Key Responsibilities
• Control and direct the food preparation process and any other relative activities.
• Construct menus with new or existing culinary creations ensuring the variety and quality of the servings.
• Approve and “polish” dishes before they reach the customers.
• Plan orders of equipment or ingredients according to identified shortages.
• Arrange for repairs when necessary.
• Remedy any problems or defects.
• Be fully in charge of managing and training all kitchen staff.
• Oversee the work of subordinates.
• Maintain records attendance and leaves by creating monthly ROTAs.
• Comply with nutrition and sanitation regulations and safety standards.
• Establishes work standards and workflow compliance to Infection Control Procedures.
• Establishes and implements policies and procedures for departmental operations.
• Plans, organizes, directs, coordinates, and supervises functions and activities of the department.
• Encourages and mentors staff creativity and innovation.
• Ensures compliance with all regulatory agencies.
• Proactive in the achievement of the facility goals and objectives.
• Demonstrates quality leadership in meeting performance plans.

Key Requirements
• Bachelor’s degree in hospitality/Culinary Arts/Hospitality Management or related field.
• Proven 5 years’ experience as Head Chef.
• Background working in a hotel an added advantage.

Skills

• Exceptional proven ability of kitchen management.
• Ability in dividing responsibilities and monitoring progress.
• Outstanding communication and leadership skills.
• Up to date with culinary trends and optimized kitchen processes.
• Proficient in the use of Windows-based office software including but not limited to Microsoft Word.
• Credentials in health and safety training.
• Ability to work under pressure and meet established goals and objectives.
